I chose to make piped shortbread. I didn t quite like them because I found them to be to greasy.
And for my favorite cookies I give you recipe for sweet salami. I know it isn t tipical but my mom just to make this salami just for Christmas so for me this one screams holidays.
225 g softened butter
175 g flour
65 g confectioners sugar
45 g cornflour
2 teaspoons vanilla essence
Preheat the oven to 150 C. Combine butter, flour, cornflour, vanilla essence and confectioner sugar with mixer. Mix on low speed until combined. Beat for 10 minutes, if you overbeat the mixture it wont hold when it cooks. Pipe into shapes you desire. Bake in preheated oven for 15 to 18 minutes, or until bottoms are lightly browned.

RECIPE:
50 g chocolate
1 egg white
120 g grounded walnuts
140 g confectioners sugar
FOR FILLING:
1 egg yolk
100 g butter
120 g confectioners sugar
Melt chocolate. Let it cool a little and than mix in egg white, grounded walnuts and confectioners sugar. Mix ii well and put it in a fridge to cool a little.
In the meanwhile mix egg yolk, butter and confectioner sugar until you get smooth and fluffy cream.
Divide chocolate mixture in three equal parts. Roll each part in to thin square dimensions about 15 x 20 cm. On top of chocolate layer spread layer of cream and then roll it up like swissroll. Repeat with remaining chocolate mixture. Put salami in fridge. Slice salami before serving.
